No-Bake Banana Pie (WFPB) Recipe

Prep Time 20 minutes
Chilling Time 2 hours
Total Time 2 hours 20 minutes
Servings 4 Portions of 185 calories each

  • 25 g Flaxseed
  • 30 g Medjool Dates, pitted
  • 35 g Rolled Oats
  • 25 g Water
Middle Layer
  • 100 g Banana, peeled
Caramel Topping
  • 65 g Medjool Dates, pitted
  • 15 g Peanut Butter
  • 35 g Water
  • 7 g Pecans

  • Process all ingredients for the base in a food processor until you get a doughy mixture. If the quantities are too small to be processed in your food processor, you might need to double or triple the recipe.
  • Place the doughy base mixture onto a very shallow tray, or parchment paper on a flat surface, and press it with your fingers while forming a flat rectangle. (I make mine in the form of circles using a round patty ring. I split the amounts of the ingredients into 4 and make 4 portions. However, making 1 large pie and then cutting it into 4 portions is much easier and quicker to do).
  • Cover the doughy base with parchment paper, and use a rolling pin to flatten the base.

Middle Layer

  • Peel and slice the banana into ⅓ inch / 1cm slices and layer them on top of the base.

Caramel Topping

  • Using a blender, blend all ingredients for the caramel topping (except for pecans) until smooth.
  • Spread the caramel on top of the banana.
  • Roughly chop the pecans (or your favorite nuts) and sprinkle them on top of the caramel.
  • Cover and refrigerate for 2 hours before serving.
  • Cut into 4 portions before serving.

Storage: Can be refrigerated for 3 to 4 days in an airtight container.
